Tuesday Stitching and Another Recipe

Our numbers grew today as we spent the day with a few others at Maree's house.  I had such a lovely day and Maree really spoilt us.
The tables were set up so lovely. Pretty cups full of sweets! 
We had brownies and blondies for morning tea, quiches and salad for lunch and delicious chocolate logs and fruit for dessert. Totally spoilt!!!
There was lots of stitching (thanks for the photo Maree!) chatting and laughing. It was a fabulous day. 
I managed a few more felt sweets for Helen's Christmas tree skirt too. 
These two were waiting for me when I got home. 
He's such a good dog and so smart, it's a joy training him and having him around.

I have another great dinner recipe for you too. This one is lasagne in a skillet and it is so easy - much easier than I've ever made lasagne before. Hope you like it. 

Skillet Lasagne
  • You will need.....3 tbsp olive oil2 cloves garlic, minced
  • 1/2 onion, chopped
  • 600g beef mince
  • Salt and pepper
  • 375g package lasagna noodles, each sheet broken into 4 pieces 
  • 800g can diced tomatoes, undrained 
  • 410g can tomato purée 
  • 1 cup water
  • 3 tablespoons chopped fresh basil
  • 500g container ricotta cheese
  • 2 cups grated mozzarella

Method....


  1. Heat oil in a large Dutch oven over medium-high heat. I used my large electric frypan. Add garlic and onion, saute for 5 minutes. 
  2. Add mince and break apart with spoon, cook until browned 6-8 minutes. 
  3. Pour half a cup of water, and 1 cup of purée over the meat mixture. Place lasagna noodles over meat mixture; top with tomatoes, remaining tomato purée, basil and ½ cup water. 
  4. Bring to a boil; cover, reduce heat and simmer, stirring occasionally, 20 minutes or until noodles are tender. Dollop ricotta cheese evenly over mixture, and sprinkle with mozzarella. Cover and let stand 2 minutes or until cheese is melted.Enjoy!!!!!
