Memories, Australia Day and Another Recipe

I have had these enamel canisters for a few years now and they mean the world to me. They were my Nanna's and my Pop gave them to her in 1945 on their wedding day. As long as I can remember they have sat on the shelf above her stove in her kitchen in the same house she lived in ever since she was married. They are perfect and were always beautifully looked after. She gave them to me before she passed away so I was able to tell her just how much it means to have them and treasure them. 
They have been in my kitchen up until today but after a clean out I've moved them to on top of the hutch where I can really see them and appreciate them.

Did you see the donuts Krispy Kreme brought out for Australia Day? A lamington one and a vanilla slice donut (which was divine!!!!) 
And now another quick, easy dinner recipe. I've made this so many times and everyone loves it. The best thing about this meal is that it's super quick to put together. Preparation time for this is literally minutes. Here it is.....

Baked Pesto Chicken

Ingredients 

3-4 chicken breast filets, skin removed
Jar of pesto sauce 
Roma tomatoes, sliced thickly 
Mozzarella cheese, grated

Method 

Place chicken in the bottom of a baking dish and coat liberally with the pesto sauce. Place the slices of tomato on top of the filets. Then cover with the grated cheese. 
Bake in a 200c oven for 40 minutes. 

That's it! Too easy! AND it's delicious!

Great cannisters... so lovely to have them and they look great on the top of the hutch. I have been putting pictures up and having memories with them! thanks for that lovely recipe... I love easy peasy tasty yummy!
